Broccoli Cheese Tots

 

Ingredients

  • 2 cups of broccoli, either fresh or frozen

  • 1 egg

  • 4 ounces of sharp cheddar cheese, grated

  • 1/4 cup of seasoned panko breadcrumbs

  • Your favorite seasoning mix

  • 1/2 of a yellow onion

  • 2 cloves of garlic

Instructions

  1. Dice your onion and garlic, and then saute them in a pan until the onions are soft. Once done, set aside to cool.

  2. Cook your broccoli until it’s a little bit less than done. If you are using fresh broccoli, boil until tender, but not soft. If you use frozen broccoli, cook according to packaging, I microwave mine for about 5 minutes.

  3. Transfer your broccoli to a bowl, and using a paper towel, squeeze all the excess water out.

  4. In a food processor, blend up your broccoli and the cooled onion and garlic until the mixture is very fine, almost like a paste.

  5. Transfer the broccoli mixture into a bowl and add the egg, breadcrumbs and grated cheese. Also add in your seasonings, I used a sprinkle of Hidden Valley Ranch seasoning and salt!

  6. Mix until combined with a flat spatula, and then begin forming your tots.

  7. Place tots on a greased baking sheet and bake at 350 degrees for about 20 minutes.

  8. Serve with ketchup or your favorite dipping sauce, and enjoy!
