Chicken Salad

this chicken salad is so versatile! high in protein and low in guilt, it makes for a quick and easy lunch or a nostalgic dinner. enjoy!

what you need for six 1/2 cup servings:

  • 12 ounces cooked and chopped chicken breast (use a rotisserie chicken to skip a cooking step!)

  • a big handful of green grapes, cut into small pieces

  • a big handful of mixed nuts, roughly chopped

  • salt and pepper to taste, or a sprinkle of adobo ;)

  • 1/3 cup light mayonnaise

instructions:

1. in a large bowl, mix all your ingredients until well combined.

2. serve with crackers, as a sandwich, or all one its lonesome… easy as pie!
