meal prep made easy: chicken meatball bowls

today’s recipe is gonna feature their Teriyaki Pineapple chicken meatballs, to make this Asian inspired rice bowl! this took me about 20 minutes to throw together, and it reheats wonderfully for those on-the-go days or busy nights where you still want a healthier option!
what you need for 6 servings:
one pack of Amy Lu Foods Teriyaki Pineapple chicken meatballs - I bought a double pack at Costco, but you can find at your local Sprouts, Fresh Market, or Whole Foods!
one red onion, chopped in slices
two tsp of minced garlic
salt and pepper to taste, or a sprinkle of adobo ;)
2 tbsp oyster sauce
1 1/2 tbsp low sodium soy sauce
1 tbsp fish sauce
1 1/2 tbsp honey
your choice of side, I did steamed green beans and white rice!
instructions:
1. in a pan preheated to medium heat, saute your onion and garlic with a sprinkle of olive oil.
2. once onion has softened, add in your meatballs and pan fry them until warmed through.
3. in a separate bowl, mix together the oyster sauce, soy sauce, fish sauce, and honey. when combined, add into the pan with the meatballs and reduce heat to low, stirring until meatballs are well coated.
4. serve with your side of choice and enjoy!
