Greek Chicken Pitas with Tzatziki Sauce and Veggie + Herb Salad

 

Chicken Marinade

2 lbs. Chicken Breast or Boneless Chicken Thighs

1/2 cup Greek Yogurt

3 Tablespoons Fresh Lemon Juice

3 Tablespoons Extra Virgin Olive Oil

1 Tablespoon Red Wine Vinegar

2 and 1/2 Teaspoon Salt or to taste

1 teaspoon Pepper

2 teaspoons Fresh Parsley, finely chopped

3 cloves of Garlic, minced

Tzatziki Sauce

1 and 1/2 cups Greek Yogurt

3 Tablespoons Extra Virgin Olive Oil

1 and 1/2 Tablespoon Lemon Juice

1 Tablespoon Red Wine Vinegar

2 teaspoons Salt

2 Tablespoons Fresh Dill diced

3 Garlic Cloves finely diced or food processed

1 large Cucumber finely grated and squeezed to drain

Greek Salad

3 medium Tomatoes diced

2 large Cucumber peeled and diced

1/2 Red Onion finely diced

2 Tablespoons fresh Cilantro finely chopped

2 Tablespoons fresh Dill finely chopped

2 Tablespoon Extra Virgin Olive Oil

1 Tablespoon Red Wine Vinegar

2 and 1/2 Teaspoon of Salt

Other

4 ounces Feta Cheese

4-6 Greek Pita Breads

Instructions

  1. Trim your chicken of any excess fat and set aside. In a large bowl, combine yogurt, lemon juice, olive oil, red wine vinegar, salt, pepper, garlic, and parsley. Add in your chicken and let marinate in the fridge, up to 24 hours.

  2. For the tzatziki sauce, in a medium bowl, whisk together yogurt, olive oil, lemon juice, red wine vinegar, vinegar, salt, dill, and garlic. Stir in grated cucumber, making sure that ALL excess water is squeezed out prior! Place in fridge until ready to serve.

  3. For the greek salad, in a medium bowl, add tomatoes, cucumber, red onion, cilantro, red wine vinegar, olive oil, and salt. Fold ingredients gently to combine. Place in fridge until ready to serve.

  4. For the chicken, you can cook it on the grill or in a pan on the stove. I prefer the grill to give the meat a little extra smoky flavor! Cook until fully done, then allow meat to cool a bit and then slice into thin pieces.

  5. Time for assembly! remove your sauce and salad from the fridge and pop your pitas into an oven set at 350 degrees to warm, about 5 minutes.

  6. Once pitas are warm, layer the pita with the tzatziki sauce, salad, and chicken. Top the pita with feta if desired before serving.

  7. Enjoy! I suggest serving your pitas with sweet potato fries or tater tots, or a little of both if you’re like me haha, to round out your meal.
