sweet potato taco-inspired bowls

who knew that comfort food could make such a good meal prep AND be a wellness powerhouse? 🍠 I LOVED making these sweet potato taco-inspired bowls with roasted chicken and beans and corn - they are one of my meal prepped dinners this week! did you know that sweet potatoes are rich in skin-loving beta-carotene, gut-happy fiber, and naturally sweet energy? they are a healthy carb that will help you fuel your stride. ✨

what you need for 3 servings:

  • about 3 small-medium sweet potatoes

  • one can mexican-style corn

  • one can low-sodium small red kidney beans

  • about a pound and a half of cubed chicken breast or chicken thighs

  • optional: light cottage cheese to top your bowls with!

instructions:

  1. prepare 2 baking sheets with nonstick aluminum foil or nonstick baking spray.

  2. cube your sweet potatoes into one centimeter pieces, and rinse and both cans of corn and beans!

  3. season your chicken as desired.

  4. on one sheet, put the sweet potatoes on one side and the chicken on the other. on the other sheet, evenly spread out your rinsed and drained corn and beans. sprinkle any additional seasoning on them the veggies that you would like!

  5. place both sheets in an oven preheated to 325°F and roast for 30-40 minutes.

  6. assemble bowls with each ingredient and top with light cottage cheese if desired.

  7. enjoy!
